Gillis Family Recipe: Nana’s Chicken Fricot
This is an Acadian dish and was a staple for my family growing up. My dad was one of 12 children growing up in Cape Breton Island, so my Nana had to learn to cook inexpensive meals that could be stretched to feed her big family. It’s one of our family favorite dishes we still make today that reminds us of our Gillis roots and family traditions.
Ingredients:
- 1 tbsp of butter
- 2-3lbs of chicken
- 1 onion chopped
- 5 carrots chopped
- 6 potatoes cubed
- 2 tsp of summer savory
- salt and pepper to taste
Directions:
- Melt butter in pot and brown onions and chicken.
- Add water to cover and simmer for 1/2 hour.
- Add veggies, summer savory, salt and pepper.
- Let simmer to cook.
