Gillis Family Sweet Potato, Carrot & Parsnip Soup
Ingredients:
- 8 cups of chicken broth
- 2 large sweet potatoes, peeled
- 2 medium parsnips, peeled
- 2 large carrots, peeled
- 1 medium onion
- 2 cloves of garlic
Directions:
- Sautee garlic and onions in olive oil in a large pot.
- Add diced sweet potatoes, carrots and parsnips.
- Add in chicken broth.
- Bring to a boil and reduce to simmer until vegetables are cooked.
- Put in blender and puree.
- Add salt and pepper to taste.
