Gillis Family Pineapple Squares

Crust

• 1 ½ cup graham cracker crumbs
• 6 tablespoons butter, melted
• 1/3 cup of white sugar

Topping

• 1 8 oz brick of cream cheese
• ½ cup white sugar
• 15 oz can of crushed pineapple, drained well
• 1 tub of cool whip

Instructions

For the Crust

1. In a mixing bowl, mix the graham cracker crumbs and sugar.
2. Make a well in the center and mix in the melted butter.
3. Press into a 9×9” baking pan. Set aside.

For the Filling

1. In a stand mixer, beat together the cream cheese and sugar.
2. Then add the crushed pineapple until just incorporated.
3. With a spatula, fold in the cool whip until just mixed.
4. Pour mixture on top of the crust.
5. Cover and place in the refrigerator for at least 2 hours to set.
6. Cut, Serve and Enjoy!
