Gillis Family Pineapple Squares

Crust
- 1 ½ cup graham cracker crumbs
- 6 tablespoons butter, melted
- 1/3 cup of white sugar
Topping
- 1 8 oz brick of cream cheese
- ½ cup white sugar
- 15 oz can of crushed pineapple, drained well
- 1 tub of cool whip
Instructions
For the Crust
- In a mixing bowl, mix the graham cracker crumbs and sugar.
- Make a well in the center and mix in the melted butter.
- Press into a 9×9” baking pan. Set aside.
For the Filling
- In a stand mixer, beat together the cream cheese and sugar.
- Then add the crushed pineapple until just incorporated.
- With a spatula, fold in the cool whip until just mixed.
- Pour mixture on top of the crust.
- Cover and place in the refrigerator for at least 2 hours to set.
- Cut, Serve and Enjoy!
